MASSAMANN curry - our take on irish stew

With St. Patrick’s day coming up I have been thinking of a curry that would be stew-like and hardy like an Irish Stew. One of our specials during our Twilight service this summer was Massamann Curry and that will definitely fit the bill - meat, potatoes and onions what could be better? So, this is our take on Irish stew!

Massamann has its roots in Muslim Malaysia which shares a border with southern Thailand (who lays claims to this dish). As the story goes, Muslim-Persian tradesmen brought this delicious curry to Malaysia - and it is thought from that the name Massamann derived from Muslim-man??? Well as stories go, this may or may not be true. But once you taste this delicious curry the name won’t matter much at all (only to remember it so you can have it again)! What makes this curry so special and different than many Thai curries is the use of many dry spices - it actually reminds me of some East Indian curries minus the aromatics. Cinnamon, coriander, cloves, and nutmeg, to name a few and traditional aromatics like galangal, lemongrass, garlic, and cilantro root all combine to make an amazing flavor combination. Our take of this recipe will include beef, Asian sweet potatoes, carrots, onions, and kale - served over jasmine rice.
